Keen-wa

Here’s a scrummy salad I made last week using Quinoa (pronounced ‘keen-wa’, although for a long time I thought it was something like kwin-oa and occasionally still pronounce it like that just because I think it’s hilarious). Just like my last salad, I found the recipe here on the Women’s Health Mag site. 

You cook the quinoa in lime juice and curry powder which gives it this awesome tangy/spicy flavour. When I make it again I probably won’t use quite as much lime juice, as along with the juice you put in to cook the quinoa, you also add more as a dressing. It ended up being quite limey (don’t get me wrong, I love lime), but could do with a little less. 

Other ingredients included chickpeas, shallots, sultunas, roasted almonds and carrot. So delicious and healthy! I ate mine with some veggie snausages :)

Now that that’s done, I have absolutely no idea what to have for dinner tonight!

Kidney Bean Salad

Okay, so I’ve mentioned my unrelenting love for Mexican food, so here’s a tasty Mexican themed salad I ate for dinner last night. 

The recipe comes from the Women’s Health Magazine website and can be found here. 

I was a lazy chef and decided to use canned corn kernels instead of corn off the cob as the recipe states. I also didn’t roast the kernels in a pan like it stated either. I don’t think that really mattered, though. I didn’t have cherry tomatoes on hand so I used regular ones, roughly diced. 

It’s probably more suited to summer seeing as though it’s a cold salad, but I’ve never been one to eat according to the seasons. 

How nice and colourful is it!

I had it with a glass of Aloe Vera drink which I’ve taken a liking to. It’s pretty tasty stuff (although the chunky bits take a bit of getting used to) and has heaps of calcium and generally no sugar! 

In other news, I am about 9 days away from completing my Bachelor’s degree (although I won’t have the paper to prove it until about October)! And….I’m about 11 days away from my trip to Japan! WETTING MY PANTS EXCITED! I have already vouched to take a photo of everything I eat. I’m going to be that annoying vegetarian in a non-vegetarian country =P

Guacamole Rock 'n' Rolly

Mexican food would have to be my absolute favourite. I actually have a very fond memory of the first time I ate nachos. It was at Miranda Fair shopping centre in Sydney with my Uncle Brian, Dad’s older brother. My brother, sister and I were staying with Uncle Brian and Aunty Deidre for a week or so in our school holidays. We flew there from Tamworth (the flight takes approximately 50 minutes) and it was our very first time in an aeroplane.

Uncle Brian took us to Miranda Fair for a day of shopping and lunch. We shared a plate of nachos in the food court and I remember having Uncle Brian explain to us what this strange green substance atop our nachos was. I’m fairly sure he refferred to it as ‘Guacamole Rock ‘N’ Rolly’ and I have gladly adopted the phrase ever since. 

I eat Mexican food approximately once a week, sometimes more. For instance, this week I ate Nachos on Friday night and Burritos on Sunday night. While I failed to take any pics of these meals, I thought I would share with you a recipe for guacamole. Whenever we have Mexican at home, Ben adopts the role of Chief Guacamole Maker. He does an awesome job of it every time. Here is how he made it last night -

Ingredients:

2 x avocados

1 x medium tomato (no need to chop it up)

1 tsp dried coriander

2 tbs lime juice

2 cloves garlic

Optional - 1 tsp chilli flakes or half a diced jalapeño 

Method - chuck it all in a food processor and blend away!

Everything looks better in Polaroid

My current favourite breakfast/lunch/any time kind of snack - multigrain English muffin with avocado, tomato and cracked pepper.

A recent stir fry with black bean sauce.

The cutest and tastiest cookies and cream cup cake ever from Little Cupcakes on Degraves in Melbourne.

A lunch from some time recently - strawberries, a wrap with veggie schnitzel and salad, a cup of Turkish Apple tea and plenty of water.

The last thing I ate - raisin toast, accompanied by a cup of tea. Perfect for a cold afternoon such as this.

Inspiration

I was inspired to start this blog by a number of food and health blogs on the webs. 

Bonne Sante is written by a lovely young lady who lives in Sydney, but I believe originally comes from my current stomping ground, Newcastle. A fellow veggie (although much closer to being vegan than I), she is absolutely chockas with knowledge about food health. I find her posts to be so interesting and eye opening. I have learned so much about various foods and their benefits just by reading this blog.

Green and Crunchy is a blog written by an American lady who has raised her whole family, with something like five kids, on a raw vegan diet (this has caused a bit of controversy but they seem to be very healthy kiddies). While I could never see myself consuming a diet such as theirs, I find the blog to be incredibly interesting. Often I have never heard of some of the foods they eat, yet I would love to share a meal with them all the same.

The Gluttenous Vegan is a very pretty recipe blog. The recipes are accompanied by gorgeous photos which, to me, makes the food all the more appealing.

These are just some of the places I look to for new ideas, knowledge motivation and inspiration.

Soup to cure a cold

After a big, awesome weekend, I am struggling with a yucky cold. I think I have come to terms with the fact that every time Ben gets sick, I get sick too. So today I decided to cook up a yummy soup to try and fight it off!

At Woolies the other day we picked up a ‘soup pack’ of veggies which included a brown onion, two carrots, two potatoes, two parsnips and a suede (at least I think that’s what it was). To this I added half a sweet potato, one more potato and some capsicum for greens (I would have preferred celery but caps is all I had). I sauteed the onions in fresh garlic and ginger before chucking everything else in. To the veggies I added two packets of el cheapo French Onion soup mix and 8 cups of water! I brought that to the boil and let it simmer for around 30 - 45 mins. Delicious and healthy, plus there’s plenty left over for Benny when he gets home from his super long day assignmenting at Uni.
